Elimination Diet: Removing Gluten From My Diet
I have briefly mentioned before I feel like crap most of the time. I am currently on medical leave from work due to chronic fatigue, headaches, dizzy spells, nausea, etc… I have had chronic fatigue for years, but always assumed it was anxiety (which I have had all of my life). The more I thought about my feelings and symptoms, the more I questioned my anxiety. Yes, I have anxiety every day (all day), but it has been basically under control for some time. I have learned a lot of coping mechanisms, so I am normally not debilitated by anxiety. So, maybe this fatigue is because of stress? Am I stressed? The more I thought about it, the more I knew this is not stress or anxiety. Something else is going on. I had standard blood work done back in August and everything came back okay. That is when the headaches and nausea started coming. The best way I can explain how I am feeling is a constant hangover or morning sickness (I’m not pregnant and not drinking every night). It’s miserable. I had an MRI to make sure something was not wrong with my brain because of the headaches I was having. That came back okay. I was tested for thyroid issues, Lyme disease, and other standard tests and everything came back negative/normal. I’m happy to know all of these tests keep coming back negative, however that still lives my symptoms unexplained. Maybe this is stress and anxiety? Some depression has begun to linger because I am so sick of all of this.
Without many answers I have decided to do my own elimination diet. I was going to go the Paleo route, but I am not willing to give up my morning latter just yet! I know dairy can be a common allergen/sensitivity but I am hoping avoiding gluten will give me the answer before I have to restrict any farther. Eliminating my morning coffee routine gave me anxiety. I love this part of the day. I make two shots of espresso (this machine is awesome!!), add my 6 ounces of whole organic milk, and done. Happiness in a cup. So, my elimination diet is basically me going Paleo but including dairy, beans, and white rice for now. Really trying to not be too restrictive if I do need to be.
Internal and External Happiness
Ideally, this is how I would normally eat, but for the last year or so I have been making myself feel better with simple carbs and sugar (think hangover food). I have gained about 8-10lbs this past year due to these terrible food choices, so aside from the fatigue, I just feel crappy in general.
Since I am trying to lose the 8-10lb I’ve gained this past year, I took before pictures, my weight, and created a workout plan to help my physical shape as well. The workout schedule below was created knowing I will likely take an additional rest day because life happens. The HIIT class incorporates weights, but I may change it up if I feel I am doing too much cardio instead of weights. My goal is to workout 5-6 days a week.
Planned Weekly Workouts
Sun: Kickboxing or Rest
Friday: Cycle HIIT
I will check in at the two meek marker and let you know how everything is. Fingers crossed it is a gluten sensitivity and I see so improvements with a healthier diet.
Do you have any food sensitivities? If so, how did you determine what they are?
